Once used to ward off witches and other evil forces, finding a four leaved clover has always been considered a lucky charm. Tradition holds that clover is the favorite plant of the fairies. Holding clover in your hand is thought to gain you “fairy sight” (the ability to see the fairies.)

It’s high in protein and the flavor of the blossoms is alright but eating clover leaves is more on the famine food side of life. As for the blossoms, they are usually made into tea which brings a precaution. This is caution usually about sweet clover (the white kind) but should be remembered for all clovers.

They should be used totally fresh or totally dried, not wilted and never moldy. In fact, moldy clover is how they discovered the “blood thinner” coumadin after it kill a lot of cows.

So when you use red clover make sure it is either totally fresh, or totally dried and has no mold. It tastes like hay.

Growing Red Clover – Gardening Basics

With its high yielding ability, forage quality and suitability for silage, red clover could play a more important role than at present in environmentally-friendly, sustainable systems of grassland farming. Dr John Frame, a past president of the British Grassland Society, is an authority on red clover, having done some classic research work on it while working for SAC. In this article he outlines the key management guidelines for its successful exploitation:

The main advantages of red clover are:

  • superiority to grasses in nutritional value and voluntary intake by animals, the net affect of which leads to enhanced animal performance in different classes of stock.
  • adaptation to a wide range of soil and environmental conditions.
  • ability to ‘fix’ atmospheric nitrogen in the root nodules, thus offering an alternative natural source of N to manufactured N fertilser.
  • tolerance to drought due to its deep rooting characteristic, and to winter cold because of its inherent winter hardiness.
  • suitability in conventional and organic farming as a break crop to improve soil structure and fertility, and as a supplier of organic matter.

Some of the advantages of Crimson clover are: Truly luxurious crimson blossoms; a tendency to produce a monotypic stand that discourages growth of weedy species (without itself becoming a pest); nitrogen fixation of about 150 pounds/acre; carbon-rich (builds soil).

The herb is harmless and health-promoting when used fresh or dried as a tea. Crimson clover prefers cool weather and moist but well-drained soils. pH of about 6.5 is preferred.

Crimson clover is somewhat shade tolerant and is often used as an intercrop in orchards and vineyards. Sown in the fall, the plants overwinter as small rosettes and then quickly spread in the spring. Sown in the spring, a good stand can still be obtained.

Is It Edible ?

Image result for red cloverIn reference to the blossoms, don’t select brown ones. You want young and fresh whether white or pink or red though white clover is the better tasting of them all.  Besides a tea you can pan roast the blossoms until nice and crispy. The leaves are another matter. Young ones are digestible raw in small amounts, half a cup or so.

Older leaves should be cooked, but I think you’d have to be hungry to eat them. It is a survival or famine food.

While it may not be that good in taste, clover can be good for you. It is high in protein, has beta carotene,  vitamin C, most of the B vitamins, biotin, choline, inositol, and bioflavonoids. Clover does come with three words of warning, however: One is that quite a few people are allergic to it and don’t know it, so go easy at first until you know one way or the other.

Secondly, NEVER …. did you see that word? NEVER ferment and eat any part of it. You want your clover either completely fresh or completely dried, Never in between. Lastly clover in warm climates can produce small amounts of cyanide. Here is the site address:

Red Clover Side Effects:

Safe in normal amounts, but consult a physician if you are pregnant or nursing. Pregnant animals have had miscarriages after grazing heavily on clover.

    I have placed dry clover on the stove to create a beautiful aromatic scent for the house. Clover is extremely versatile. I agree with your review of the potential health benefits.

    When I was very young….under 6, we lived by a large red clover field….we used to run through it all the time…I can look back in my memories and still see the beautiful field….great post…
